What travertine actually is

Travertine is a form of limestone that forms around mineral springs. As it forms, gas bubbles leave behind the characteristic pits and channels that give travertine its texture. It is calcium carbonate, like marble, so it etches. But it is also far more porous, and it is usually finished honed or tumbled rather than highly polished, for that soft matte organic look.

Filled, unfilled, and why it matters

Travertine is sold filled or unfilled. Filled travertine has the natural pits filled with resin or cement for a smoother surface. Unfilled travertine leaves them open for a more textured, rustic finish. Both are vulnerable. The open pits in unfilled travertine trap liquid, oil and grime, and once something acidic sits in a pit it works on the stone from inside the texture. Sealer slows staining but does not stop etching, and on a surface this porous, sealer is fighting a losing battle in a working kitchen.
